Children In Need Cupcakes

As I'm sure yo all know, today is Children In Need. I decided to get involved and bake some Pudsey cupcakes. You may have seen them featured on The Great British Baking Club along with lots of others.

I've had an own clothes day at school and we've been doing lots of fundraising. Last year Children In Need raised around £18 million for disadvantaged children in the UK and I'm sure this year the total we be even higher so if you haven't got involved yet then go on, tune in to the appeal on BBC1 tonight and give what you can, even the smallest amount of money will make a difference!

Strawberry Cheesecake Cupcakes

First and foremost, sorry for the lack of posts recently, apparently technology doesn't like me.

But here I am now, last weekend we had someone come to stay with us so it gave me an excuse to try out another recipe from my new Humming Bird Bakery book. After looking through the book, I decided on Strawberry Cheesecake Cupcakes and making the most of the short-lived heatwave, I walked to the shops and got my ingredients.

They have a layer of strawberries, then a vanilla sponge, topped with cream cheese icing and finished with crushed digestive biscuit and chopped strawberries.

They went down really well and we all agreed that they really did taste like strawberry cheesecakes! I'll definitely be making them again...

Ready, Steady, Bake!

As you may know from my post earlier in the week, this week was National Cupcake Week. And that meant I spent most of yesterday baking. I made two different batches of cupcakes, the first was banana split cupcakes which have gone in the freezer until Tuesday when I can take them out and decorate them in time for my Birthday! Yay!

The second lot were rocky road cupcakes which I've been saying I'm gonna make for ages but haven't managed to until now. The base was a chocolate cupcake, it was topped with caramel icing and finished with mini marshmallows, walnuts, raisins and chocolate syrup which I also made.

Chocolate Syrup is used quite a lot in America but is pretty difficult to get hold of here in England. When I was looking at recipes for these cupcakes yesterday loads of them used chocolate syrup so I had  look around at recipes and managed to figure out how to make it. It couldn't have been easier and didn't take longer the 5 minutes. It really finishes the cakes off, in looks and taste, it will keep for a couple of months in the fridge and can be used for all lots of the other things, a sauce on ice cream, chocolate milkshake when added to milk being some of them.

National Cupcake Week!

This week is National Cupcake Week, now in it's 3rd year, it celebarates all things cupcake! Take a look through my old posts to get some inspiration for your baking, there's chocolate get well cupcakes, red velvet cupcakes, Easter cupcakes and vanilla cupcakes with creamcheese frosting.

I kicked off my celebarations for the week by finally getting around to buying the Hummingbird Bakery's cookbook and I'm planning some cakes to make later in the week so keep your eyes peeled, I'll soon be posting about them.

More Cupcakes!

It was one of my friends' birthday's a couple of weeks ago and she wanted some cupcakes for her party so, naturally I was who she called for some help. I went round to her house and helped her make some cupcakes, and sad as it it I was pretty excited because she has a better oven than me!

Here's the results and I can safely say, they tasted great!

Celebration Cupcakes

As of today, my blog has officially been online for 5 months, yay! I made these cupcakes in celebration of it, they were chocolate and vanilla flavour with cream cheese frosting.

Red Velvet Cupcakes


I went to the Summer Good Food Show in June and when I was there, I found a stand selling all sorts of different cake making things. I brought some little sugar hearts and having already used some of them on my chocolate birthday cake, I thought they'd look great on some red velvet cakes.

Get Well Cupcakes


My grandma-or Nonna as she's from my Italian family- went into hospital last week so when I went to see her, some get well cupcakes were in order! I made vanilla cupcakes with chocolate frosting and cut out icing letters and plasters, topping them off with a little edible glitter.I was pleased with the results, here's some pictures...

Easter Cupcakes

Yesterday was Easter Sunday so on Saturday I got busy in the kitchen. I decided to make some Easter cupcakes to take to the family I would be visiting. I did a selection of designs, here's what I came up with...
